Dear friends of ours, Clive and Sandra mentioned last week that they had Duck Pizza at an eatery which they dined at while down from Brisbane for The Rocky Horror Show.
As we both enjoy duck, that became my plan for tonight's dinner. Of course it meant a gluten free base for Jen. Normally we would just buy one but this time I thought I would have a go at making one. So many ingredient variations can be found on Chef Google. Just chose a basic recipe that only required gluten free flour, yeast etc, and not all the other stuff like potato starch, tapioca flour, xanthan gum and several different rice flours.
At time of writing, my pizza is done and dusted. Jen's is yet to be cooked, apart from a slight baking of the base, as she is still at work. It will be completed when she commences her journey home.
Ready for the oven
Hoisin Sauce on the base, small amount of Mozzarella,
Wild Rocket with sliced Chinese Five Spiced Duck Breast
Ready to eat - absolutely delicious
"Constructing" Jen's Pizza
The dough was difficult to work with. Used a rolling pin instead of the fist shaping/rolling method
Hoisin Sauce and Mozzerella
Wild Rocket and Duck - Ready for the oven
FEEDBACK: Best to buy a GF base. The base made for Jen's pizza was as good but the time and effort not worth it for the recipe followed.
