Nothing fine or fancy here. Steak, just Steak

A nice piece of Eye Fillet is generally used for a Wellington. For good old Steak and Chips etc, a good New York Cut or Sirloin will do the job. The Heston Blumenthal method of cooking steak is the way I like to get the job done. From the first time I used this method, I was converted and have always cook my steak this way. Rare to medium rare being my preference. In my opinion, a well cooked steak does not need any sauce, gravy or condiment.
An occasional treat will be a piece of Wagyu. I like to have this with mash potato and Shitake Mushroom Sauce. Again, Heston Blumenthal's method for the mash is used. Unfortunately, the video is no longer available. Instead a full episode of "How to Cook Like Heston" is. The mash potato method commences at 5:50.
