As with all recipes, there are many variations available on the Internet. The Ponzu I use for this recipe is my favourite, There are easier recipes to choose from

There were numerous occasions where we would have made and had these at home as an entree' before going for a meal at a local Thai restaurant.

Extreme 2 Minute Noodles

Ingredients for Chilli Prawns - Singapore Style

Preparing Paste for Chilli Prawns

The recipe for this dish is for mud crab. Replacing the crab with prawns provides more "meat" and is less of a mess to eat.

Mess can be part of the eating experience. Not for me

The recipe may seem daunting for most people but believe me, it is definitely worth the effort.

Chicken with Crispy Noodle Salad

Basically just a Wombok Salad with Shredded or Sliced Chicken. (left over roast, store bought, sometimes leftover Masterstock Chicken). This particular plate has the Wombok (Chinese Cabbage) replaced by Baby Cos Lettuce.

Chargrilled Pork Skewers (Video - Luke Nguyen's Vietnam)

Delicious!!!

Prawn Laksa

Many recipes available with numerous pastes also available in shops.

Time permitting, making your own paste can be very satisfying

Pho Bo (Beef Noodle Soup)

Our honeymoon to South East Asia, 2014, included 1 week in Vietnam. (Hanoi, Halong Bay and Ho Chi Minh City)

Pho was readily available everywhere and of course we indulged numerous times

I've made this many times and although what we had on our honeymoon was exceptional, it can be just as remarkable making it yourself.

Many variations and methods can be found.
