Curry and Peanut Butter
Chicken with Rice
This recipe is so quick and easy with plenty of flavour.
600g Chicken thigh fillets-cubed
1 red capsicum thinly sliced
1 and half cups of halved beans (ends removed) 
2 tsp of curry powder
2 tbsp of peanut butter
400 ml coconut milk









Heat 2 tbsp of oil in a pan, add chicken and cook for 5 minutes
Add curry powder, cook a further 2 minutes coating the chicken
Add peanut butter, coconut milk, beans and capsicum. Mix well
Cook for approx' 7 mins until coconut milk has reduced and thickened.
Serve with Jasmine Rice and garnish with coriander
