Every summer when figs come in to season, I will always whip up a few of these.
Hazelnut and Fig Cake







This is the first attempt at making and my first time tasting a red velvet cake. I wanted to know what all the fuss was about. Although I was more than pleased with the result, I really question the excitement that people had for it.

This cake was purposely "replicated" for a friend after she sent me a photo of someone's attempt at making a Hedgehog Cake. I found it so hysterical, when I first viewed it, that it took me 20 minutes to gain some composure while waiting at a medical centre.

So many recipes and variations for this delicious classic. I have tried several and they all work.

This Chocolate Mousse Cake was the 7th one I made. It was for the friendly staff at a fabric store that I delivered to. By the time I made this, I had developed the required techniques and patience to end up with a near perfect result, presentation wise.
The cake was first presented on Masterchef Australia, Season One in 2009. (More on this and its creator in the Mastechef section of this blog) 




When I informed my son Adam that I was going to make him a cake for his 30th, I asked him what he would like and he replied "that train cake you made when I was younger". So I did.

The Christmas Fruit Cup Cakes below were made by Jen. Jen is the real talented and creative one when it comes to cakes. These were made for friends and customers a few years back. 


















For my 50th, Jen replicated Tetsuaya Wakuda's signature dish as a cake. The entire cake topper was handmade using modelling fondant. As usual, Jen did a fantastic job.

I was so proud of Jen I just had to show her effort and skills off. I sent a photo off to Tetsuya. I had a response from the Reservations Manager stating that Tetsuya was impressed and that he would like to send us a gift upon supplying our address. A few days later we received a brief note and signed copy of his DVD, Pursuit of Excellence. A real feel good moment
