Several years ago, I went through a macaron phase.
Macaron, macaroon, so over the discussions/debates as to the correct pronunciation. Just enjoy the texture and seemingly endless flavours that are available these days.
Yes, they can be hard to get right but once you find a recipe, and there are many varying ones out there, that just happens to works for you, go with it and don't look back. Making you own macarons means you can, as with making your own ice cream, have any flavour you desire.
