I prepared this plate for a bit of fun with Jen. A few nights before we had dined at Black by ezard with one of the courses being presented similar to this. A lot more elegant though.  








Patagonian Toothfish (Miso Marinated)

What is Patagonian Toothfish?

Due to its high fat/oil content, it has a very buttery texture. Delicious.
Can be pricey if you are fortunate to locate. Suggest you order if you find it on a menu






Thai Style Baked Snapper













Pan Fried Spanish Mackerel with Quinoa Salad

For the salad, just toss prepared quinoa with rocket, tomato and season with a squeeze of lemon, salt, pepper and olive oil










Thai Style Spanish Mackerel

The mackerel cutlets are steamed in a bamboo steamer with a spread of Lemongrass and Ginger Paste. When cooked, serve on bed of rice with chilli, shallot and coriander garnish and a squeeze of lime.
