It is not an overly sweet dessert, having condensed milk as an ingredient, that tastes very nice and looks very impressive when presented.


Method
* 5 different coloured jellies made with only half the water required.
* Leave to set completely.
* Cube all coloured jellies and place into a ring mould and set aside.
* Sprinkle 24g of gelatine over 250 ml of water and leave for 1 minute.
* Meanwhile place 395g of sweetened condensed milk, 200 ml of heavy cream and 1 tablespoon of vanilla essence in a blender.
* Stir in 250ml of hot water to gelatine. Stir until dissolved then add to blender.
* Blend until thoroughly combined.
* Gently pour creamy mix over cubed jelly.
* Place into fridge to set completely.
* Invert onto a plate, slice and serve.
With Australia Day approaching, I decided to make one using the colours of our flag. Timing was of concern as I wanted to make it with blue being the dominant colour with red and white scattered through. Without knowing how much blue food colouring or type would be needed to get the deep blue into the condensed milk component, I went with 6 packets of blue jelly and 2 red then went the "conventional" way.



* Gently pour creamy mix over cubed jelly.
* Place into fridge to set completely.
* Invert onto a plate, slice and serve.
